UBI KAYU GORENG

[INGREDIENTS]

300g tapioca (peeled and minced)
100g castor sugar
50g grated white coconut

[SKIN INGREDIENTS]

100g rice flour
Pinch of bicarbonate of soda
Dash of salt
50g water

[METHOD]

1)      Place minced tapioca into a square tray, steam with a high flame till done. Add in sugar and grated coconut, press firmly. Slice to pieces when cooled.

2)      Heat oil, mix well skin ingredients, stain onto (1), deep fry till golden yellowish.
